Chocolate Covered Cupcakes

Chocolate Covered Cupcakes are called kleine Kuchen mit Schokoladenguss in Germany.

Ingredients for Chocolate Covered Cupcakes:

  • 5 eggs, XL
  • 300 g (10.5 oz) of sugar
  • 2 pouches of vanilla sugar OR 2 teaspoons of vanilla extract
  • 250 g (8.8 oz) of Kartoffelmehl OR potato starch
  • 100 g (3.5 oz) of all-purpose flour
  • 1 pouch of baking powder OR 3 teaspoons of baking powder
  • 2 tablespoons of rum (your brand of choice)
  • 250 g (8.8 oz) of melted margarine OR butter

Decoration for Chocolate Covered Cupcakes:

  • 150 g (5.5 oz) of premium bittersweet baking chocolate (60% cacao)
  • 1 knife-tip of shortening
  • candy shred — various colors
  • cupcakes wrappers
  • themed cupcake picks (Peter Rabbit for Easter)

Decoration for Chocolate Covered Cupcakes

Preparation:

Beat the eggs with your handheld electric mixer until frothy. Add sugar and vanilla flavor and mix until creamy before you add the rum. Sift flour, potato starch, and baking powder together and add to the egg mixture. Mix until smooth. Heat the butter in the microwave until liquid and add to the batter. Mix thoroughly until smooth.

Line your cupcake pan with the cupcake wrappers. If you are not using  cupcake wrappers, you will need to butter the baking pan. Fill your wrappers/cupcake pan with batter using two spoons or a decorating bag. The cups should be just over half full with batter.

Preheat the oven to 190°C (375°F) and bake the cupcakes on the middle rack for about 18-20 minutes.

When done, place the cupcakes on a cooling rack.

Heat the chocolate with the shortening in a bain-marie. Brush the top of the cupcakes with chocolate and then spread the candy shred on the top while the chocolate is still melted. 

Note: For those concerned about serving these chocolate covered cupcakes with alcohol to children, I understand. However, rest assured, the amount of rum (2 tablespoons) divided between the 24 cupcakes is practically indiscernible. Also, when the cupcakes bake in the oven the alcohol evaporates and only the flavor is left. Compared to the cold medicine I used to give my children years ago, well, there is no comparison, in my opinion no need for concern. And there shouldn’t be any concern either. But it is a decision I will leave to the parents.
